what type of finish to use

I just built a new work bench with collapsible leaves similar to this using birch plywood:

I want to edge band it with oak scraps. What would be a good finish for the table and what is the best way to edge band it with oak, just glue it? I’m thinking using poly as the finish to make it smooth because I plan to incorporate a router table into one of the leaves. I read of many of you using BLO before sealing; is this just for color?

BLO is boiled linseed oil(not really boiled it just has a dryer in it) In my estimation not much of a finish. Since it’s a work surface some wipe on poly should doe the trick. you edge banding you can just shoot some finish nails in it or drill counter sink screws and ad bungs(wood plugs).
