I used MinWax Water based varnish. It has worked well for other projects but not the kitchen cabinets. It has not worn well near the sink and along a cabinet face that gets lots of handling, (not the liquor cabinet). It has held up well in other areas.

I’ve been spraying Minwax polycrylic with my earlex 5500 hvlp with good success. It sprays well without thinning and dries quickly.

As you have a compressor and as long as it has sufficient CFM recovery, you could use a LVHP gun with a waterborne lacquer or poly. I have used many different brands dependant on the clients choice. Personally I prefer solvent based lacquer as IMHO easier faster, however, General finishes Enduro Water based Lacquer is good.

There are so many choices that each have their opinion and favorites.

Are the water based laquers as durable as the solvent based for cabinets
Thanks for your suggestions

In my case the jury is still out, however, the Enduro has promissing results. Others may wish to comment.
