So, not exactly a table, but I’m designing a bedside infant sleeper that has 2 back legs and 2 front facing legs that go in between the mattress/box spring. I am struggling with how to make the vertical legs adjustable. I am look for as much adjustability as possible, not just 1-3 inches for leveling. The leg dimensions will roughly be 2”x2”. I’m looking for adjustments somewhere between 12” and 20”. Any ideas?

Cut a dado on the legs and use a metal bar with holes in it. Use pins to insert in holes to adjust the height.
