Epoxy and cutting boards

So i bought a nice looking slab of walnut, crotch area, has some awesome looking grain. It’s only 12” long so I thought I’d cut it and make a couple cutting boards out of it. The problem is there’s some cracks in it from knots and what not. I figured some epoxy and turquoise would look good with it but was wondering how safe or practical it would be for a cutting board?
