I’ve just finished a maple veneer project. Now I need to figure out how I’m going to finish it. Problem: I don’t have any scraps of the actual veneer left over, and don’t want to wait for two weeks before I could get another lot of the same thing delivered.

Can I go get a sheet of maple-veneered ply and use that for my testing, assum

I think that the veneered plywood would give you a reasonable approximation of the finished product. I’d give it a try, keeping in mind that your results will be approximate, and not exact.
