Need a finish for a coffee bar with a butcher block-style top

I’m in the process of making a coffee bar with a butcher block top with spalted white oak and walnut. Does anyone have a suggestion for a finish to use that would resist coffee stains?

Here’s a picture of the top before I started flattening it.

Clear epoxy bar top finish would be my choice. If that’s too high gloss, a high quality poly in the sheen of choice.
