I have a customer who’s daughter had a stroke and has trouble holding things when cutting them. She is looking for a cutting board with some prongs to help hold what she is cutting.

Does anyone know where I can purchase stainless steel prongs that I could use embed into a cutting board?

Maybe the hardware off a fish filleting board?

Take some stainless steel rod stock and make your own prongs using a bench grinder.
