I’m looking at making a murphey bed. I would use 3/4 plywood for main construction. I’ve done one in Red Oak but this one will be Cherry. Would Baltic Birch give me the Grain Depth and pattern to really personify the Cherry finish, or would another type do. I looked at Cherry Plywood but it came in at $140. a sheet. I would like to keep it down to $80._$90 a sheet.

I just finished a cherry bed, and did some thinking about this recently. I would use only cherry plywood and cherry hardwood. Cherry darkens with age, so even if you match the color of birch or alder now, it won’t match in a year.
I use a local discount supplier that specializes in building material and plywood. I buy 1 sided cherry seconds of 3/4” plywood for $40. Two sided seconds are $60. Usually there is some minor damage on one edge. I just rip it to width, and save the money.
You might look for a discount center like Mr. Plywood, or Shur-way building center in your area. Ask if they have any seconds.

I’ve not had good experience staining birch. The finish is blotch-y at best. I’ve tried a few methods and have not hit on the “magic” formula.

I agree with pintodelux. Save yourself the headache and use cherry ply.
