I’ve 2 near completed jointers, each has 1/8” each side for adjustment, is that a bit much?

yes, but the plane should still work fine

how wide is the iron. The wider the iron, the less it will be to much. If its 2” wide, its what I’d call border line, and I agree with jap, it’ll still work ok.

They’re both 2” wide irons. I may try and glue a spacer on each side to fill it in, what is optimal? 1/8” total?

There is no need to glue in a spacer in my opinion.
