I recently build some knife handles with ebony. I polished them to a nice shine. Is there a need for any finsh to protect them?

i would go with at least a coat of shellac. because ebony has natural oils you want something like a shellac and also because of the natural oils you want something to seal it off so your hands don’t get all black. been there done that and especially with a knife where there is a lot of rubbing and hand contact and everything. just my 2 cents.
