Top one of the 3. The blade costs the same as the entire kit but I think it is a little more versatile.

It’s a very handy knife, and it will definitely hold up well under daily use. Replacement blades are inexpensive if you need them, and they are easy to change. I made a matching cutting board for French loaves, and it’s a nice set.
