Gluing up 360 individual 3/4 end grain pieces?

I had an idea for an end grain cutting board in which there was no pattern, so no way to do a glue up, cut, and then glue strips together. I have 360 individual pieces (18×20) that I need to glue up. I was thinking of just doing it in 5×6 piece chunks to help with keeping the seams tight and making sure i have plenty of time to work before the glue dries.

Any thoughts or other techniques?
