How do you notch out the bottom of a drawer for undermount drawer slides?

Use a dado blade and run the finished drawer over it a few times until you get the width you need?

A dado blade would work. Large drawers would be hard to manage on the tablesaw. Since it is not a visable joint, I usually use a dovetail saw to define the edges of the notch, then remove the waste with a coping saw.
