I am getting ready to make my first cutting board. Why? To have a great cutting surface AND save or prolong the edge on my knives. So I am studying woods to find the “best” ones for my cutting board. I keep seeing “Blunting Effect on Tools” in wood discriptions. If I understand “Blunting Effect” correctly, this basicly means, dulling effect on the knife blad! Is this a correct understanding?
Well, if I am making the cutting board to help NOT DULL the knife blade, why use a wood that has a HIGH BLUNTING EFFECT? Any thoughts and suggestions?
With Hard Maple being the shining icon in wood choice for cutting boards, what other wood(s) has the same qualities? I’m looking for a medium to dark wood to go with Hard Maple that has it’s near perfect balance of Hard, Dense, Close Fine Grain and “Low Blunting Effect”.

It seems to me that there are a lot of choices. Hard maple is popular because it isn’t that expensive, it’s hard, and it’s relatively easy to work. I think you want to avoid woods like teak that have a lot of natural silica in them. Woods like walnut aren’t quite as hard as (hard) maple but I think that just means you will have to resurface the cutting board more frequently. Your knives will eventually cut up the surface no matter which wood you choose . . .
