I just finished glueing up my drill press table. I laminated two pieces of birch ply together to get a thickness of about 1”. Can I spray the table with Bullseye Shellac and then finish it with spray on spar urethane? Is this an adequate finish?

First, I’d face the edges with 1/2-3/4 hardwood.
Then, maybe 3-4 coats of the spar varnish.
I’ve never finished mine. It get’s beat up pretty quickly as I use it for metal and wood.

Why spar? It is formulated for exterior applications and will allow wood (as in spars) to expand and contract.
Just use regular poly over shellac, or better yet, just use the shellac and a water based poly. Spar is way more expensive.

Shellac is unnecessary. Go straight to waterborne poly.
