What kind of top coat for Iron Acetate on Oak Dining Table

Hey everyone, I’ve just finishing the “staining” process with my home brew on an Oak pedestal table. Though the results vary per board, I actually love the inconsistency. So now my next questions, what kind of topcoat should I used (and how many coats)? And how long to I need to wait before I apply the topcoat. Thanks much.
