Finishes for tables?

I make rustic tables in my spare time to sell. I make around 100-150 a year. I have been having a professional spray a finish on them for me but his prices are high and he is moving to another state. So that means I will need to finish them myself. I have used poly for small projects but really don’t like using it because of its long dry time and the amount of time it takes to apply. What finish would you recommend that is fast drying, durable, and fast to apply?

depends on the wood I love laq but I can spray to If I couldnt then I would use something like general finish wipe on poly it dries slow but is easy to apply and after five or so coats is bullet proof and pretty but if you are building that many tables then I think a spray system is what you need you get good results with those 40.00 grizzly spray guns I would get some gemini laq or lenmar and cut by 10-15% and add a drop of two of retarder and she will look like glass and you can put three coats on in one day
