I watched that the other day and was blown away. Measuring shavings in microns?!? Amazing!

They also make paper by hand (very labor intensive) instead of simply stopping by local officemax and buying a stack fro close to nothing.

He said it was most likely Alaskan Cedar; beautiful straight grain.
