How to stabilize wood.

Is there any way to stabilize or at least minimize the amount it expands and shrinks? Most of the time I use hard wood such as Walnut or Mahogany. I let it get aclimated to the shop which is climate controlled, oil it and let it dry for a while before putting some polly on.
