Would it be possible to make criss cross leg vise hardware out of a dense hard wood?(hickory, Purple Heart, etc.)

I don’t see why not. Obviously you would have to make the parts more robust than used in metal hardware. I have used my wood vises on my Scandinavian style workbench for 40 years now and I find I never need to screw down my vises very tight. All I am doing is holding some wood in a suitable position to work on it. Its not like metal working where you are hammering a bar of steel to 90 degrees.
