I am working on a wingback chair. I am trying to decide what the Angle from the back to the seat should be. Anyone have any suggestions? I want it to feel somewhat relaxed.

Try taking a chaise lounge chair and setting it where you might feel comfortable sitting then use your bevel gauge to get the angle you need. Just a thought!
