I’m not saying you will loose weight with this diet but I have. Perhaps….well, it could be other life changes that have helped me loose weight but this my be helping. I’m one of those people who like to eat things that taste good to me. I can eat peanut butter and jelly sandwiches for lunch everyday and not complain because I like them.
My neighbor throws food away because they don’t like the same thing two days in a row.
I can eat this everyday for weeks, noon and evening meal.
I usually put it on a tortilla that has been cooked so it is flat, or use corn chips as soups and eat it tat way.
It is a recipe my daughter found on the Internet and modified.
Here it is:
1 1/4 cup of corn (I use a can of corn, frozen works fine too. If you use canned, reserve the juice.) Or, get some corn on the cob and cut the corn off.
1 red bell pepper, chopped
1 red onion, diced
3 cloves garlic, minced
1 can black beans
1 can kidney beans, drained.
2 large jalapeño diced
1 teaspoon oregano
1 tablespoon chili powder
2 teaspoons (heaping) ground coriander
2 teaspoons cumin
1 cup of sweet potato or yam, chopped into squares (about the size of a kidney bean?)
a few drops of liquid smoke
juice of half a lime
1 teaspoon of pumpkin seed oil (a good drizzle of it, maybe more?)
Cook the corn in a skillet until golden.
Add pepper, and onion, cook until onion is a bit golden.
Add the beans with the garlic, and spices.
Add sweet potato/yam, and cook until the potatoes are tender. (If they are a little raw, you’ll get the farts really bad!
In a cup, mix the lime juice, juice reserved from the corn, liquid smoke, and pumpkin seed oil.
Add to the pan and taste it to see if it needs more liquid smoke. Don’t add more than 2-3 drops at a time, and taste each time. You can easily ruin the whole dish with a couple of drops too much.
