One arbor end should have right hand threads and the other left hand so nuts don’t come loose. Grinder nuts should only be hand tight, or snug down with a wrench. I always hold one wheel when tightening the other wheel nut.

I always just hold the wheel on the end I’m tightening. If there’s room, you may be able to grind a couple flats on the arbor behind the wheel and stick a wrench on there to hold while tightening. My grinder came with the wrench flats but I don’t think I’ve ever used them.
