“Canoecraft” is the gold standard book in strip canoes. I think the same guy wrote a book on kayaks.

Get ahold of the book “The Strip-Built Sea Kayak” by Nick Schade. Very detailed, but easy to read.

I have used Newfound Woodworks with great success. They have plans, books, materials, and complete kits.
