Mainly just it’s intended use. If you cut down a tree and mill it in to lumber it can go on to become construction material or furniture. If you cut it in to chunks and split them you’ve got firewood. Both have to be left to dry. Lumber so it becomes stable and won’t warp as you work it, and firewood so it is dry enough that it will light.

I’m curious, is this for a crafting side of the game? Is this going to be similar to Fallout or Elder Scrolls?

I play mostly rpgs and some mmos when I have the time.
