I am not real familiar with hand planes, I picked up an used one with an adjustable mouth plate. What is the purpose of an adjustable mouth plate?

For taking thinner or thicker shavings The plate holds down the wood that the blade wants to lift and split of fthe stock as the plane moves forward. For a very thin shaving, you want the wood supported as close to the blade as possible. For a thicker shaving, usually used for rougher work, that support can be moved out from the blade some.
