quick cutting board questions

I finally got the saw set up and dialed in and I would like to start by making a cutting board.
I see the sizes vary but generally, how thick should the finished board be?

Mine are normally 1 1/4” thick after planing and sanding. I normally start with glue ups 1 1/2’ THICK.
