i have an old table that the veneer has come loose in places. could i run a steam iron over the veneer to get it all off?

If its glued with Hyde glue yes. Sometimes using a damp cloth under the iron helps if the veneer is thin and you want to reuse it…

You might be able to reglue the veneer.
