i have seen multiple youtube videos, in which people explain how to make wipe on poly, from fast drying polyurethane. But i do not understand what the difference is between the two except that the wipe on poly is thinner

Wipe on poly is far more expensive than mixing your own.

That is the difference, the wipe on varnish is thinner (that is, has more thinner added to it). When a manufacturer makes it, they take the varnish they have, thin it, call it “magic finish something or other”, and charge more . You can then take the wiping varnish, add BLO, and it becomes danish oil (typically mixed 1/3 each thinner, varnish, BLO).
