I want to use this to fill voids in a piece of walnut and am wondering if I can use it to fill the voids, sand to raw wood and the put an oil on the wood followed with a wipe-on poly.

I use Timbermate! It is available from many different sources including Amazon.

It can be colorized by many different means including mixing different colors of Timbermate!
It is waterbased, easy to apply, easy to sand, and non-toxic.
All of the overfill can be put right back into the container.
Dry left over can be brought back to life with water.

The only precaution is that since ithe is water based it must be protected from finishes like latex paint and/or water based wood stains/overcoats.

I have used it on many occasions and been very happy with the results!
