Not all those restaurants are good and know how to serve the dish.
101 rule is never to allow the eyes to become crossed, and
102, if a customer complains some foreign object is found covering one eye, it is not, repeat NOT the pirate version of the meal.

Of course it’s not the pirate eye… it’s winking at you. That’s the one you’re supposed to eat first.

But really, the freshest eyeballs have a nice “pop!” when you bite down on them. They tend to get mushy if out of the body for more than a couple of days, or even hours if not kept on ice.

It’s also a good meal to keep as a leftover, closing the eyelids keeps them fresh for a day or two, they call those leftovers – second sight sitting. Another interesting facet is that when you look down at what you are eating, it looks back and maybe give you one of those winks you were talking about. Even the healthy food to delicious food ratio is the most balanced you can get – 20/20. Enjoy, enchante mon petit cochon. Bon nuit.
