You could attach a shim to the1/2” stop with double sided tape that will stop the head movement at 5/8”. I’m guessing 1/8” thick minus the thickness of the tape will do it.

Personally, I usually do like Mark and try to mill everything together. In the rare cases I need an extra part after the fact, I’ll just mill ‘till I can’t feel a difference between the reference part and the new part, when I put both on a surface and slide my fingers back and forth across the butted edges.
