Shellac is a good barrier coat to prevent pitch coming
out. It’s safe too.

Pine is easy to sand, so if you need to sand a lot of rounded
shapes, I’d consider pine or some soft hardwood. Pine
can split so that’s something to consider if making thinner
parts from it.
