It’s probably easier to get an even colour by spraying, so yes, it’s perfectly acceptable to spray the tinted seal coat. Having said that, If you’re happy with the results that you get from wiping, you can continue to do that. My only concern lies in the fact that you’re talking about bathroom cabinets. Shellac isn’t the most water resistant finish out there. You might be better off tinting some of the original finish with your dye and spraying that onto the surface.
