There are a lot of clear epoxies, you’ll have to do your due diligence to pick the one you want.
I chose Bartop because it works for what I need it to do.
I haven’t ever noticed any yellowing, but I suppose that is possible.

I’ve tinted epoxy before with Rustoleum spray enamel.. It wasn’t on purpose, but the wife love how it turned out and in five years hasn’t faded or changed at all.
