Finishing for Pine

I just finished assembling a change table for my first child, who is due to arrive any time now. The last step is to finish it. I had been planning to paint it but I ended up liking the look of the natural wood and so I am thinking of just applying some kind of clear protection. What should I be looking at using?

I'd like to preserve the natural look of the wood as much as possible, so no staining. I also want to make sure it is safe as it can be for a baby who will quite likely taste it at some point, given that babies like to taste just about everything at some point or another.

All finishes, provided that they don't contain heavy metals, and they almost never do these days, are non-toxic once they are dry. Shellac would be a good choice for your project, since shellac is actually edible. Unfortunately, shellac isn't terribly durable, but it is quite easy to repair. Nitrocellulose lacquer would also work well, as would a water-borne finish. Polyurethane varnish wouldn't be my first choice, since it's a pain in the neck to repair if it gets damaged.
