I think 36” would be fine for a most stuff past the first cut in a full sheet. With full sheets, I either have my dealer make one cut, or do the first with a circular saw and shop made guide, simply because I work alone and it’s easier to handle. Most parts typically made with sheet goods are less than 36” wide or tall.

The front and back rails on a Biesemeyer clone fence are standard metal shapes, 2×3 tube and angle, and not that expensive. Check with a local steel yard before you cut your rails. If you think you’ll sell the saw later, keep the “real” rails intact.
