I think you need to make an artistic decision on what you want for this piece. I know I have been dissapointed by some projects where I left a little strip of sapwood in a tabletop. Sometimes you want to emphasize the interplay between the dark walnut and light sapwood.
If you are building other pieces for the room, how do you see them? Also, I recommend finishing an offcut. Sand and finish a scrap just as you would the entire project. Sometimes sapwood looks great in the raw, but changes under a finish.
