You should not have any issues building those panels. I think alder would be a good choice. It is pretty stable, so the large panels should be OK. I don’t normally like to build single panels that big, but being part of furniture wil help. You will have to glue up stock to get the width. We use a butt joint which works fine, but you could do biscuits or dowels if you prefer.
