I am not a metal expert but I do play around with my old south bend lathe sometimes. when I sharpen my lathe cutters I grind a few seconds and then dip them in water to cool and then grind some more. This alternating grind and cool prevents removing the temper. I think you could use this method to shorten you 6” knives to 5 1/8. I would use a cutting wheel on a small angle grinder to shorten them to around 5.25 then a bench grinder to finish the job. If you use a accurate means of measuring balance should not be a problem but you can weigh them to be sure.Just be sure to grind and cut a little and cool alot.
