Ash is good. Springy woods like oak, ash, hickory are good
for Japanese-style fitting of plane irons to plane bodies.

You can try something like hard maple or cherry or
whatever of course, but you may find the brittle
hardwoods crack around the mouth with a Japanese
style plane.

Wild grained pieces of wood will likely distort seasonally.
