Yea, that’s pretty much what I ended up doing to fix it, Charles.

I tried first to just put another coat on, but it was obvious that the streaks weren’t going to go away on their own. So, sanded it back with 320 on a ROS just till the streaks disappeared, put a light coat of Danish oil on, then put on 4 more coats of Gel Topcoat the correct way. Final result was very nice. Just enough, I think, to protect the wood, but not much of a finish built up. I guess time will tell how well it holds up over the years.
