Watco on cherry is beautiful. Protection is minimal, but I wouldn’t hesitate to use it for this project. Yes, it will get darker with exposure to sunlight, and it doesn’t need to be direct. Normally cherry will get many shades darker within a few months, and hit nearly its full darkness after a year or so. One of the first projects that I built with cherry was bed where I used maple for the posts and cherry for the headboard and rails. When I finished the project I was disappointed with the cherry’s color, and in some areas I couldn’t tell the difference between it and the maple. Within a month the difference was noticeable, and within a year it was night and day.
