Regarding the hinges, I’m planning to mount on the exterior, on the edge of the door, and the side of the cabinet. I’d like to find something that doesn’t look like it was intended for a mortise (maybe no sharp edges). Any specific ideas on this?

Leaning towards polished brass, but open on the finish. I do need some kind of catch to keep the dog out (she’s the reason this is getting built in the first place).
