I think I would try a sample of the walnut veneer, to see how close it matches. Since you’re making rather shallow mortises (I’ve never used the domino), I think you would be better off with a panel made of something stable, like mdf, covered with veneer, that you can glue all the way around. This will give the door plenty of stability, and you won’t have to worry about seasonal changes.
