I think it should at least match the thickness of the woodworking vise that you plan to use.
It should be around 2-1/4”. The bench I am working on is 3-1/4”. Actually, I try to maximize the thickness.
At the end of the day you are trying to add mass to your workbench. All that mass is needed for hand work to keep your clamped work piece from moving.

Now power tool guys probably don’t need all this mass. The top could be a lot less in terms of thickness.
