I have never been anything other than disappointed with LED lights. They are simply not a patch on a low voltage halogen. They are either too weak or too focused a beam, and they are a blue-white which looks harsh in a cabinet.
If you are dead set on the LED route, I’d get one to try first and show your wife before you buy them all.
