Luke, if you are looking for something seamless and laminated, a lot of bib box stores sell formica counter tops that are pretty long.

Alternately you could use 2 pieces and instead of hiding the seam, accent it. Rabbet in a piece of wood in the middle so it is flush. Maybe stain/finish it or paint it a different color so it looks like it is there for a reason other than hiding a seam.
