Laminated panels 30" x 24" x 1" thick

I work for a pipe organ company and we often make laminated 5-ply glue up panels for the consoles. We normally make the panels with 3 inner layers of poplar and walnut outside layers. Alternating the grain by 90 degrees for each layer. These panels are drilled with many 7/8" holes in a pegboard like pattern and need to stay stable for many years.

My question is: Will our 5-ply glue up method work for panels this large or should I be using another method?
One thought I had was to use voidless birch ply of 1/2" or 3/4" and glue walnut to both sides. Any thoughts or suggestions would be appreciated.

I'm no expert in lamination but I can't see how your typical glue up wouldn't work. I've never seen a poplar core like you describe and I'd be looking to use a voidless ply if it were my project. I hope you post it when you're done!
