If you’re serious about this, I think it’d be beautiful. I’d also agree that the finish needs to be well done, and keep in mind the extra maintenance, as Charlie pointed out.

After reading your comments, some things to consider might be to incorporate a cutting board section into the top of it that can lift out for cleaning and eventually replacement if it starts looking too beaten-up for your liking, compared to the rest of the countertop. You could also do the same and have little removable squares that would be trivets. You could have the cutting board and trivets slightly raised, and maybe leave the trivets unfinished. Just a thought.
